The creamy, as Mastro Peppe calls it, we prepare a particular salami, which can even be spread, precisely called creamy, selecting and working parts of shoulder and bacon, with natural condiments and stuffed strictly in natural casings.
The spreadable salami is a typical Marche salami, so much so that it has obtained the IGP mark, with a production area well identified by the brand. The contamination of the border areas is inevitable, so much so that we do not remember when our neighbors taught us to make this salami, our farmers have always done it and eaten, it was used especially for the mid-morning snack, to refresh themselves from the work on the fields.
A salami made with the less valuable parts of the pig enriched with abundant fat, easy to eat spread on bread, like fresh sausages, but unlike these it keeps much longer, and even seasoned, as it should always be, it remains soft.
