My name is Giuseppe, known to everyone as “Peppe,” and I am a Master Norcino. I was born and always lived in Norcia and learned from my father, who in turn learned it from his, the traditional method of pork processing.
For generations, our family has been dedicated to this craft, passing down the recipes and secrets to produce quality cured meats. We raise and carefully select our pigs here in Norcia, slaughter them with respect and process them into hams, salami, capocollo and other delicacies, which we then age in our cellars. Our workshop is a place of knowledge and flavor, where we breathe the air of tradition and taste the authenticity of our products.
There are only a few of us left. Perhaps because it is too much work, perhaps because it requires a passion that not everyone has, a dedication that not everyone is willing to give. Maybe because the world has changed and now there are other opportunities, other dreams, other aspirations. I, however, do not give up. I continue to do the Norcino trade, according to tradition, with pride and love. Because for me it is more than a job, it is a vocation. Because for me it is a way to express my creativity, my art, my soul.

For the passerby, curiosity and the pleasure of tasting Mastro Peppe’s norcinerie grow as soon as they notice the traditional setting of the space in front of our store and can only grow as soon as they cross the threshold! The pictures of our store can help you perceive the atmosphere, but from here you cannot smell it…. In fact, the premises represent not only a space where you can buy products, but are also the place through which every tool, every object, every photograph on display speaks of us, our family and the tradition that distinguishes us: the art of pork butchery.

We are located on Via Anicia in the vicinity of Porta Massari, a place historically devoted to trade, and you will recognize us immediately because an opulent storefront will welcome you. We carefully take care of its layout so that you will have an idea of how, according to what our ancestors taught us, excellent meat is obtained: using as nourishment for the pigs only what nature offers, the fruits of the forest. As you enter the store the leap into the past still continues, you will in fact see the ancient tools proper to the farming tradition and above all you will be surrounded by our cured meats…it will be like being inside our cellars: for those who have had the opportunity to get to know them, they are the place for the triumph of the senses!

Hanging on the large wooden beams of the ceiling and displayed on our long countertop are the products that Mastro Peppe has wisely selected and deemed ready for sale, following a proper aging period. But what characterizes our store even more is the workshop and its location. In fact, the latter is located beyond the sales counter, from which it is separated by a large window: if you are lucky, you will be able to see us at work intent on the production of the delicious sausages. The elements that connote the workshop are only the butchering table, the large machine that minces the meat, the scales and the hooks on which the fresh products are to be hung before being transferred to the cellar. But what cannot be seen, only tasted, is Mastro Peppe’s experience, translated into the inimitable flavor of our products.
