Whole Spelt
Spelt is the oldest cultivated wheat, it was used by man already in the Neolithic.
Spelt (Triticum dicoccum) is a cereal that belongs to the grass family. Rich in nutrients, with a high selenium content.
Spelt Salad Recipe
Wash the spelt in cold water and drain it.
Boil 1 liter of water with salt, add the spelt and cook for 20 minutes.
In a pan put oil and fry for 2-3 minutes garlic, onion and chilli, add carrots and bell pepper,
Sauté for a few minutes, then add the fennel and zucchini, continue to cook for 5min minutes, then add the peas and cook for another 10 minutes. Add salt to taste.
When cooked, drain the spelt and add it to the vegetables and sauté everything.
