Dried Porcini Mushrooms
Strangozzi recipe with Porcini mushrooms
Soak the dried porcini mushrooms in a large pot full of warm water, after at least an hour, drain them and cut them into small pieces, filter the soaking water and keep it aside.
In a large pan, heat the oil and add the garlic and chilli. Add the mushrooms and let them flavor for a few minutes then blend with white wine over high heat, continue cooking, if necessary use the mushroom soaking water.
To the water of the soaking of the mushrooms add more just enough to cook the strangozzi, cooked, drain them add them to the browned mushrooms in the pan, sauté everything, turn off the heat, add chopped parsley and serve.
