Corallina Norcia
Corallina di Norcia, the real salami typical of the butchery tradition.
In the past consumed especially during Easter breakfast.
The corallina is obtained by working the shoulder of the pig. The lean, finely ground meat is enriched with lard, salt, pepper, garlic and white wine.
Stuffed into natural casings, it matures for 70 to 90 days after spending a certain period in the cellar with a wood-burning fireplace.

The butchery could be sent vacuum-packed, the vacuum is made for transport, upon arrival of the product we advise you to remove it from the vacuum, and to consume it not before 12 hours of rest in the fridge in the vegetable section, it must be removed from the fridge at least an hour before consuming it.
