Cicerchia Soup Recipe
Ingredients for 4 people:
500gr of cicerchie, 250gr peeled tomatoes, 1 onion, 1 carrot, 1 stalk of celery, 2 garlic, parsley, basil, oil, salt, pepper.
Leave the cicerchie to soak overnight. Drain and put them in a pot with cold, salted water. Cook for 35 minutes. Meanwhile, brown the chopped vegetables and speck in extra virgin olive oil in a pot. After a few minutes add the tomatoes. Cook for about 10 minutes. Once the chickling is cooked, beat in two ladles (with a little cooking liquid) and add the puree obtained to the pot with browned and tomatoes. Cook for about 15 minutes.
