Strangozzi with Truffle
Ingredients:
- durum wheat semolina,
- black summer truffle 1.5%,
- albumen
- boletus mushroom,
- truffle aroma.

Strangozzi recipe with Truffle, Aubergines and Peas
Brown the onion in extra virgin olive oil, add 300g of diced eggplant and 300g of peas, a few sage folgia, a pinch of chilli, salt and sprinkle with white wine, cook for about 15 minutes. Add the freshly drained strangozzi to the sauce and sauté them in a pan.
