and I am a Master Norcino<\/strong>. I was born and always lived in Norcia and learned from my father, who in turn learned it from his, <strong>the traditional method of pork processing<\/strong>.<\/p>\n<p>For generations, our family has been dedicated to this craft, <strong>passing down the recipes and secrets to produce quality cured meats<\/strong>. We raise and carefully select <a href=\"https:\/\/www.norcineriaansuini.it\/en\/ansuini-brothers-norcia-pigs\/\">our pigs here in Norcia<\/a>, slaughter them with respect and process them into hams, salami, capocollo and other delicacies, which we then age in our cellars. Our workshop is a place of knowledge and flavor, where we breathe the air of tradition and taste the authenticity of our products.<\/p>\n<p><strong>There are only a few of us left<\/strong>. Perhaps because it is too much work, perhaps because it requires a passion that not everyone has, a dedication that not everyone is willing to give. Maybe because the world has changed and now there are other opportunities, other dreams, other aspirations. I, however, do not give up. <strong>I continue to do the Norcino trade, according to tradition, with pride and love<\/strong>. Because for me it is more than a job, it is a vocation. Entrando nel negozio il salto nel passato continua ancora, vedrete infatti gli antichi strumenti propri della tradizione contadina e soprattutto sarete contornati dai nostri salumi...sar\u00e0 come trovarsi all'interno delle nostre cantine: per chi ha avuto modo di conoscerle sono il luogo del trionfo dei sensi!<\/p><p><a class=\"fancybox\" href=\"https:\/\/www.norcineriaansuini.it\/wp-content\/uploads\/2012\/04\/negozio-ansuini.jpg\"><img class=\"alignleft size-medium wp-image-99\" style=\"border: 1px solid black;\" title=\"Negozio Fratelli Ansuini\" src=\"https:\/\/www.norcineriaansuini.it\/wp-content\/uploads\/2012\/04\/negozio-ansuini-300x199.jpg\" alt=\"Negozio Fratelli Ansuini\" width=\"300\" height=\"199\" \/><\/a>Appesi sulle grandi travi di legno del soffitto ed esposti nel nostro lungo bancone trovano esposizione i prodotti che Mastro Peppe ha sapientemente selezionato e ritenuto pronti per la vendita, a seguito di un giusto periodo di stagionatura. Ma ci\u00f2 che ancor pi\u00f9 caratterizza il nostro negozio \u00e8 il laboratorio e la sua collocazione. Quest'ultimo infatti si trova al di l\u00e0 del banco delle vendite, dal quale \u00e8 separato mediante una grande vetrata: se sarete fortunati, potrete vederci all'opera intenti nella produzione dei prelibati insaccati. Gli elementi che connotano il laboratorio sono solamente il tavolo della macellazione, la grande macchina che sminuzza la carne, la bilancia ed i ganci su cui vanno appesi i prodotti freschi prima del trasferimento in cantina.
