Today the term “Norcino” refers to the skilled artisan who produces delicious cured meats<\/strong>, sold at Norcinerie. Historically, however, this term has indicated the inhabitant of Norcia, but also the surgeon of the Precian school, in other cases the butcher; he was also a theatrical mask. The historical story of the Norcino is very complex, and it is our intention to make it clear how much this trade is part of the Norcian culture and our personal story.<\/p>\n

Every farming family owned a pig. Its diet consisted of acorns, corn, and potatoes, with the addition of “household leftovers,” such as bread crumbs and all the other few scraps of food. It was absolutely forbidden to waste these precious leftovers, which were gradually accumulated inside “lu sicchittu de lu pu\u00f2rcu,” usually arranged in the kitchen. The pig of the house was housed inside “lu stallittu” and often children also had to take care of grooming it. It was usually killed during the month of January and its meat processed in the favor of low temperatures. The cured meats were then cured in cellars. Their consumption was dictated by maturation: the last product to be eaten, because it had the longest maturation time, was the ham. There were no large pig farms in Norcia; families, as already mentioned, owned their own head intended for self-consumption; at most, a few could be found loose in the woods.<\/p>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n

A key date for Norcini was August 16. On that day the “sienti ‘n pu\u00f2<\/em>” (listen to you) fair was held, and is still held today. During that day, in fact, the Mastri Norcini active mainly in Rome, Livorno and Pisa would arrive in Norcia to hire adults and young people, who had recently finished elementary school, to bring with them to the city as workshop help or “a f\u00e0 la stagione.” Negotiations to determine the compensation for the work that the Norcians would do in the city would begin with the very expression “listen to you…”.

\"Mastro<\/a>Dire Norcino vuol dire Norcia. Oggi con questo termine si indica l'abile artigiano che produce prelibati salumi, venduti presso le Norcinerie. Storicamente invece questo termine ha indicato l'abitante di Norcia, ma anche il chirurgo della scuola preciana, in altri casi il macellaio; fu anche una maschera teatrale. La vicenda storica del Norcino \u00e8 molto complessa ed \u00e8 nostra intenzione far comprendere quanto questo mestiere faccia parte della cultura nursina e della nostra vicenda personale.
Tutte la famiglie contadine possedevano un maiale. La sua alimentazione era costituita da ghiande, granturco, patate, con l\u2019aggiunta degli \u201cavanzi di casa\u201d, come le briciole del pane e tutte le altre poche rimanenze di cibo. Era assolutamente vietato sprecare questi preziosi avanzi, accumulati man mano dentro \u201clu sicchittu de lu pu\u00f2rcu\u201d, generalmente sistemato in cucina. Il suino di casa era ricoverato dentro \u201clu stallittu\u201d e spesso anche i bambini dovevano occuparsi di governarlo. Di solito veniva ucciso durante il mese di gennaio e le sue carni lavorate con il favore delle basse temperature. I salumi erano poi messi a stagionare nelle cantine. Il loro consumo era dettato dalla stagionatura: l'ultimo prodotto ad essere mangiato, perch\u00e9 con il tempo di maturazione pi\u00f9 lungo, era il prosciutto. A Norcia non esistevano grandi allevamenti di suini, le famiglie, come gi\u00e0 ricordato, possedevano il loro capo destinato all'autoconsumo, tutt'al pi\u00f9 se ne potevano trovare alcuni liberi per i boschi.
Un appuntamento fondamentale per i Norcini era quello del 16 di agosto. In quel giorno si svolgeva, e si tiene tutt'ora, la fiera di \u201csienti 'n pu\u00f2\u201d. Durante quella giornata infatti i Mastri Norcini attivi soprattutto a Roma, Livorno e Pisa arrivavano a Norcia per ingaggiare adulti e giovani, che avevano da poco terminato le scuole elementari, da portare con loro in citt\u00e0 come aiuto bottega o \u201ca f\u00e0 la stagione\u201d. La trattativa per stabilire il compenso del lavoro che i nursini avrebbero svolto in citt\u00e0 iniziava proprio con l'espressione \u201csenti un po' tu...\u201d.
Anche la nostra famiglia ha vissuto questa fase della migrazione stagionale, infatti, il giovane Peppe ha lavorato per anni a Livorno. \u201cEsperienza importante e dura \u2013 commenta Peppe \u2013 tante volte non potevamo apparecchiare la tavola perch\u00e8 dovevamo usarla come scala per appenderci sopra i salumi freschi\u201d; prosegue con il ricordo: \u201cin ogni citt\u00e0 c'erano tecniche di lavoro diverse, guardando ho capito e imparato quale era giusta e quale no\u2026come dice il proverbio: \u2018impara l\u2019arte e mettila a parte!\u2019\u201d.
Ancora oggi produciamo i nostri salumi come Mastro Peppe ha imparato non solo durante queste trasferte toscane ma anche dai suoi genitori e sta tramandando a noi figli, Fabrizio ed Emiliano. Dal 1938 la nostra famiglia vede oggi la quarta generazione di Norcini, continuando sempre a produrre e stagionare le migliori Norcinerie, proprio come un
